Hands-down, breakfast is the best meal of the day. Not because it’s the best for you, but because breakfast foods are just so delicious! Breakfast for breakfast, breakfast for lunch, and my personal favorite, breakfast for dinner! One of my go-to dishes for breakfast is waffles – yum! I searched for hours on the internet to find a simple gluten-free, dairy-free recipe… it was not where to be found. Everything I came across had had so many ingredients, most of which I didn’t own. These recipes were crazy, so I decided to develop my own!
That’s right ladies and gentlemen, only three ingredients; gluten-free and dairy free! I also added two ‘optional’ ingredients, but personally I like to enjoy my waffles smothered in syrup or laced fresh fruit, so to be completely honest, I don’t need the added flavor, but you-do-you-boo!
I found that the specific ingredients you use make a big difference as well. I found that the flour that works best is Bob’s Red Mill Organic Brown Rice Flour. It’s stone ground and very fine and powdery. I tried making this recipe with a different brand of brown rice flour and it wasn’t ground as fine, so my waffles came out gritty, so if you are using a different type of flour, make sure it’s super fine. Originally I used oat milk for this recipe, but I tried a variation of this recipe with almond milk instead and there wasn’t as much flavor. I think this one is more of a personal preference.
To make this quick and easy recipe, all you have to do is start by mixing the two eggs with the oat milk. After that is mixed, add the rice flour a little at a time until completely mixed, no lumps. If you want to go with the 5 ingredient recipe, this is when you would add in the two optional items, a pinch of salt and a splash of vanilla.
All that’s left to do is heat up your waffle iron. I love using my mini waffle iron because I freeze the leftover waffles and the mini size fit perfectly in my toaster so I can easily heat them up for breakfast; which is nice on busy weekday mornings! They also cook faster in the mini iron, which makes them fluffier! This recipe made 10 mini waffles (or 3-5 regular sized waffles)
I top my waffles with either syrup and powdered sugar, or fresh fruit. I even found this amazing coconut whipped cream that is so good! Highly recommend!
3 Ingredient Waffles (Gluten-free, dairy-free)
Ingredients:
- 2 Eggs
- ½ cup Milk Alternative ( I use Oat Milk)
- ¾ cup Brown Rice Flour (superfine)
- Pinch of Salt (optional)
- Splash of Vanilla (optional)
Toppings:
Instructions:
- Mixing together eggs and oat milk.
- Add in the rice flour a little at a time until completely mixed. There should be no lumps
- Add in additional items if desired.
- Cook on waffle iron, finish with your favorite topping and enjoy!
